Spaghetti with Plantain Bites (Dodo!!) and Detox water




















I made this dish recently and so I am sharing this easy recipe with you guys. This recipe is great for lunch or dinner time and it is also part of a healthy balanced diet. This is very easy to make and it took me about 20 minutes to whip this up.
I really love seeing colors when I'm eating. It makes food look more interesting!

                                                            Ingredients
                                          -  1 pack of Dangote spaghetti
                                          -  1 finger of plantain
                                          - 1 tbsp Olive oil 
                                          - 1 small Onion (finely chopped)
                                          - 1 cube of Onga seasoning (or any seasoning of your choice)
                                          - 1/2 tsp Curry
                                          - Salt to taste
                                          -  2 tbsp tomato and pepper puree
                                          - Vegetables of your choice for garnish

Directions 
- In a medium pot of boiling water, break the spaghetti in half and add a knob of butter or oil to stop it from sticking together.
- Add salt and let it boil for about 10 minutes. Set aside in a strainer for the water to drain out
Cut the plantain in sizable bites and fry
- Heat oil in a pan, add the finely chopped onion and curry
- Add the tomato and pepper puree and stir  
- Add Onga seasoning and cover and let cook for about 3 minutes
Once it's done, serve the spaghetti, dodo and sauce in a plate  
Add your preferred choice of vegetables for garnish.



There is nothing more refreshing than strawberries , cucumber and mint water. This come with loads of benefits too. i do try to switch up the ingredients each time, cos variety is the spice of life. This actually tastes so wonderful and also very refreshing! It beats soft drinks anytime.

                                                      Ingredients
                                                   - 4 mint leaves
                                                   - 2-3 Strawberries
                                                   - 1 medium cucumber
                                                   - 1 pitcher/ jug / glass cup of water 

Directions 
-Wash Strawberries , mint leaves and cucumber. 
-Slice the cucumber and strawberries thinly
-In a glass cup or any pitcher , add the strawberries, cucumber and mint leaves
-Add water and refrigerate at least 3 hours or overnight .( I used mine with ice cubes)

Here are some of the health benefits of the ingredients in this water 

- Strawberries are a great way to add flavor to almost anything. It makes the water taste so much better while also providing antioxidants and added vitamins and minerals to your body.

- Mint adds a touch of sweetness without the sugar and it also aids in digestion

- Cucumbers are a good source of B vitamins and adding a few slices of cucumber to your water makes for excellent re-hydration. They are 95% water and helps keep the body hydrated while eliminating toxins.

HAPPY NEW MONTH!


Oh Hello July!!! Here's wishing you all a month filled with sugar, spice and everything delicious.

We are now in the second half of the year, and  I remember writing down in the beginning of the year what I plan to achieve by mid- year. Going through the list made me realize that even though I did not achieve all of what I wrote down, I am not the person I used to be 6 months ago, neither am I where I used to be. I'm thankful for God's grace over my life. I'm thankful for the gift of Life , Love, Laughter , Food, Faith, Family and Friends.

WHAT'S FOR BREAKFAST????


Breakfast is hands- down my favorite meal of the day. I looooove pancakes so today, I made some homemade pancakes.
I usually like my pancakes with either Nutella chocolate spread *yum* or Maple syrup garnished with fruits or any other topping of my choice.

What  you need for this heavenly deliciousness
- 1 1/2 cup of Flour
- 1 small onion
- 1/4 teaspoon of Baking soda
- 2 tablespoons of Sugar
- Pinch of salt ( or any seasoning of choice)
- 1/2 teaspoon of Vanilla extract
- 1 cup of Milk
- 1 large Egg
- Fruits of your choice
- Maple syrup 
- Vegetable oil


Directions
Add the Flour, Baking soda, Sugar and Salt ( or any other seasoning of choice) in a bowl. Slice the onion to the required size you want and add.
Then add the Egg and Vanilla extract, start to mix, gradually pour the milk in and continue to mix for about 1 minute.
Heat your frying pan with a little vegetable oil just enough to grease the pan ( I use a non stick pan so I don't use too much oil) then add the mixture little by little with a spoon .
Flip over when brown. Repeat the process until the batter is finished.
Serve in a bowl and enjoy!!!!!





I like mine served with a cup of coffee, strawberries and chocolate. Oooooh and a glass of detox water too.
You can have fun with it by switching up the fruits; Apples, Blackberries, Grapes, English pear and Bananas are all delicious in these pancakes. So feel free to swap out the Strawberries for any of those.
